We were commissioned by the Ritz Carlton Hong Kong in two separate times - first for their Tosca Italian Restaurant, then two years later for the Tin Lung Heen Chinese Restaurant. Both are projects for service trolleys, or what the French call gueridons.
The Tosca trolleys, as with our trolleys for the other hotel restaurants, are specifically designed with their functional need and interior mood in mind. We were allowed the time for detail design, which covers the selection of the appropriate caster wheels. But whatever time we needed, there was a delivery deadline that we must meet - the beginning of the white truffle season. Our trolleys may rightly be called white truffle gueridons!
For Tin Lung Heen, their original intent was for trolleys of the same design, only with slightly different dimensions and compartments from the Tosca's. However, the Tosca's design is to us not suitable for them. Hence we re-designed the whole trolley, together with the search for new caster wheels that work seamlessly together.

香港丽思卡尔顿酒店
香港丽思卡尔顿酒店是分两次跟我们合作的 - 第一次是关于 Tosca 意大利餐厅，两年后就轮到天龙轩中餐厅。两个项目都是服务小车 - 这当代服务器具概念源于法国，它们称为 gueridons。
我们设计给 Tosca 意大利餐厅的服务小车跟其他酒店的服务小车一样，都需要满足餐厅特定的功能需求并符合餐厅装潢的格调。酒店容许我们足够的时间来设计，甚至让我们测试摩登轮子在现场地面的表现。但无论怎样，有一个时间限期是不能超越的，就是白菌季节。我们的服务小车可能更应该称为白菌服务小车！
天龙轩中餐厅原本也期望使用同样设计的服务小车，只是略为修改尺寸等。但我们却认为 Tosca 服务小车的设计不大适合他们餐厅的风格。所以我们重新设计，包括选用全新的轮子，以得到最佳的使用与视觉效果。
